Shane Delia and George Calombaris’ St Katherine’s restaurant is committed to changing the everyday culture of dining into an interactive and honest experience. Using architecture as a backdrop to the food of the Ottoman Empire, the challenge was to enable the service of 300 covers with consistency and efficiency. This was achieved by dividing the kitchen into 3 separate areas of their respective functions. The result is an atmosphere where diners interact in the culinary experience.
